Pauline Lagdameo

Chef Pauline Lagdameo is a Filipino pastry chef who has been active in the industry for the past 25 years.  She graduated with an Associate’s Degree majoring in Culinary Arts from the New England Culinary Institute located in Vermont, USA.  Chef Pauline started baking at a very young age and already started selling her chocolate cakes at the age of 7.  By the time she had reached high school, she had already studied with Sylvia Reynoso-Gala and Heny Sison. 
After graduating from culinary school, she worked as a pastry cook in Hyannisport, MA, USA before coming back to Manila where she first worked as a pastry chef at Via Mare Restaurant then as pastry chef at the Le Souffle Group of Restaurants.
In 1999, she joined the Center for Culinary Arts Manila (CCA) as part of their regular faculty.  From there, she taught at the College of St. Benilde (CSB) and La Consolacion College as part of their HRM faculty.  From 2005 to 2010, she taught at the International School for Culinary Arts and Hotel Management (ISCAHM).  It was during this time that she was invited to be the jury representing the Philippines for the Asian Pastry Cup in Singapore. She was also part of the Philippine Culinary Team that won the Silver Medal for the Gourmet Team Challenge at the 2009 HOFEX in Hong Kong.
After being a chef instructor for more than 10 years, in 2010, she became the Corporate Chef at Fonterra Brands, Philippines, manufacturers of Anchor dairy products. From 2015 to 2019 she was the Regional Commercial Chef for Arla, Inc. reporting to the regional office in Malaysia.
Today, she is the chef/owner of Chef P’s Cakes and Pastries Shop, an online baking business she started in 2019. She continues to do consultancy projects and demonstrations for various companies.
